On St Helena Island we don't have any traditional biscuit recipes but one of the most popular cakes is called "coconut Fingers". Coconut fingers are present at every major celebration or community get-together. As it was 'biscuit week' on The Great British Bake-off, I wanted to make something with the flavours of coconut fingers but in a biscuit form and here is the result. #gbbo Give them a try and let me know how they turned out for you.
Ingredients and spices that need to be Take to make Coconut Shortbread:
- 60 g sugar
- 180 g plain flour, sifted
- 130 g butter, softened
- 50 g desiccated coconut + a little for decoration
- 4 tbsp icing sugar
- pink food colouring
Instructions to make to make Coconut Shortbread
- Cream together butter and sugar
- Add flour and mix well
- Add coconut and bring it together into a dough. Place in the fridge for 30 minutes to firm.
- Preheat oven to 180C. Remove dough from the fridge, and roll out to 1cm thickness. Cut your biscuits in whatever shape you prefer. (I made mine this shape as a celebration of the traditional St Helenian cake that inspired the flavours.)
- Place cut biscuits on a parchment-lined baking tray and bake for 15-20 minutes. Remove and allow biscuits to cool completely before decorating.
- Whilst the biscuits are cooling, mix your icing by slowly adding very small amounts of water to your icing sugar. It takes the smallest amount of water to make the icing, so take your time until you have a thick honey consistency. Add a tiny drop of food colouring and mix. If you put too much water in & your icing is too runny then add more icing sugar to get it back to the right consistency. (Extra icing can always be put in the fridge and used for another bake the next day)
- Once biscuits are completely cool. dip the top of each biscuit in your icing and set aside. Once all are covered sprinkle more coconut on top to decorate. Enjoy with a nice cup of tea.
