- 250 gms ripe mango (peeled and chopped)
- 1/2 cup orange juice
- 2 tsp Woon/ agar agar
- 1 1/4 cup water
- 1/3 cup powdered sugar
- For Coconut jelly
- 2/3 cup water
- 1 tsp woon/ agar agar
- 4 tbsp powdered sugar
- 1/8 tsp salt
- 2/3 cup coconut milk
- as required Fresh mint leaves to garnish
- as needed Chopped coconut small pieces
Instructions to make to make Woon Mamuang (Mango Coconut jelly cubes)
- Keep few mango chunks aside for later. Blend the rest with orange juice to a smooth paste. Add agar agar to water in a pan without switching the gas on. Stir it such that it's mixed completely, now switch on the gas and keep stirring,bring it to a boil.Check with a spoon that no granules are left.
- Add sugar, mix well such that no lumps are formed and add the mango puree and mix. Check the sugar at this time, add more according to taste. Take a borosil/ baking square dish(I used 7inch tin) and grease it a little. Add this mixture to the dish, add chopped mangoes to give fruity touch and remove all air bubbles from the top. Let it set and room temperature for half and hour and then set in fridge still set completely.
- Similarly, prepare for coconut jelly. Instead of mango puree, we add coconut milk. Pour this mixture when warm on top of set mango jelly. The best way is to pour through spatula, this will make it spread evenly.
- Add diced chunks of coconut and remove air bubble. Let it set. Cut in square pieces and garnish with fresh mint leaves.
- Notes: 1) I made coconut milk at home. you may use the ready made one. 2) After adding mango puree or coconut mil to agar agar mixture, do not wait to pour it in tin else it will set soon.
